I was really impressed with the wines I tasted from Domaine de Pallus. Bertrand Sourdais crafts magnificent expressions of Cabernet Franc at his family’s estate in Chinon. The Pensées de Pallus will give readers a very good idea of what to expect and also happens to be a steal, while the flagship La Rougerie is off the charts.

My personal favorite here is not the slow-developing and initially toasty La Rougerie, though, but the Croix Boissée, one of the finest terroirs in Chinon. I also have a great affinity for the Pensées de Pallus from 60+-year-old vines on the yellow-colored tuff terroir that combines sand with limestone soils in the terraces of Cravant-les-Côteaux and delivers a highly digestible Chinon classic. The Clos de Pallus is finer and more intense and gives a more Burgundian style of Cabernet Franc.
